Vegan Pancakes

Did you know that you can make fluffy (and tasty) pancakes without eggs or milk. In fact I prefer these pancakes to the non-vegan variety since I consider them healthier!! They are also very easy to make and dont take long at all to make for breakfast.

To make 8 pancakes

Ingredients:

  • 1 cup plain flour
  • 1/4 cup sugar (adjust to taste)
  • 3/4 cup soya milk
  • 2 tbsp oil
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 2 tsp cinnamon

Method

  • In a large bowl mix the flour, sugar, baking powder and cinnamon.
  • Add the soya milk, oil and vanilla extract and mix well until the mixture is smooth and creamy but not too runny.

  • Place a frying pan on medium heat and using  kitchen roll dipped in oil wipe the surface of the pan.
  • Pour the mixture in the pan to your desired size and cook for about 2 minutes on either side until golden brown.

  • Serve with your choice of toppings including Jams, butter, maple syrup..honey etc etc..

    Delicious! I needed pancakes but had no eggs so although I used normal milk, and had no cinammon or vanilla…still turned out delicious! Fluffy and light, better than the eggy kind!

    Thanks – the kids and I have tried a few different vegan pancake recipes and often all we could taste was the baking powder. These have a great balance between flavour and fluffiness! We added a tbsp or so extra flour, and used half wholemeal and half white flour, plus I was out of cinnamon so just used a little nutmeg. Thankyou!

    these tasted perfect. I used 2/3 whole wheat flour and 1/3 spelt flour and a pinch of salt. They were so dense and moist, very filling and satisfying. I recommend using spelt to make the dough more heavy and moist like a fresh muffin.

    First time I tried it I did follow the recipe as it was written, but I felt that it had less sugar and more cinamon
    So.. On the second time, I added only 1 teaspoon of cinamon, 3 tsp vanilla and one small apple I cut it to small pieces :)
    Andddd…. It was delicious :-)
    Happy with my final result :))
