Fried Shrimp Sandwich
This was one of those epic sandwiches that was truly delightful to eat all the way through. Crispy fried shrimp (prawns) with a punchy taste in a soft sub, topped with onion, tomatoes, lettuce, cheese and a special sauce.
The special sauce is a horseradish and sour cream sauce which complements the fresh salad and the crispy prawns really well.
We added two lawyers of cheese for good measure and we used cheap processed cheese which funnily enough just added a creamy meltyness rather than a strong taste. This just brought everything together.
The star of this show is the shrimp. To get a punchy flavour we first marinated them in a mixture of salt, paprika, lime and cumin. We then dusted them in plain flour with a pinch of salt and quickly fried them on a high heat to get them crispy.
- 200g Raw King prawns
- 1 tsp sweet paprika
- ½ tsp cumin
- ½ tsp salt
- ½ lime - juiced
- 2 cups of plain white flour
- ½ tsp salt
- ½ tsp black pepper
- Oil for deep frying
- Bread roll, bap, sub etc
- Processed burger cheese
- Lettuce
- Tomato
- Onion
- Horseradish dip
- sour cream
- Lime Juice
- Mix the marinade ingredients together in a bowl (salt, cumin, paprika and lime juice). Taste and add more seasoning as required
- Mix in the shrimp then allow to marinade for 20 minutes
- Place the flour in a large wide bowl and add ½ tsp salt
- Drain the shrimps from the marinade and place in the flour (do individually to make sure they are well coated)
- Fry on a high heat in batches so as not to drop the oil temp (190 degrees C)
- Once golden remove from the heat and drain on kitchen roll
- Mix 1 tbsp sour cream with 1 tsp horseradish sauce and a squeeze of lime to create the sauce
- Cut the square cheese in triangles and add 1 layer to the bottom of the sandwich
- Top with plenty of fried shrimp then another layer of cheese
- (at this stage we placed it in the oven to get the cheese melted and bread heated up)
- Then add tomatoes, lettuce, onion and sauce.
- Press together and sckoff!
