Sticky Toffee Pudding

OK this must be our favourite all time dessert. You know a dessert is your favourite when you repeatedly order it at all restaurants to compare the best one you had. We’ve tried a few recipe’s before, including Nigellas one pot does it all recipe (which to be fair tasted good, was easy, but just wasn’t with the top).

A sticky toffee pudding needs to be a soft and moist sponge and under any case has to be covered in delicious toffee sauce, and topped with ice cream. This particular recipe uses treacle to enhance the flavour and we also added some to the toffee sauce.

Ingredients
Ingredients for the sauce:
  • 100ml double cream
  • 55g unsalted butter
  • 55g tbsp dark mascovado sugar
  • 2 tbsp treacle
  • 1 tbsp golden syrup
Ingredients for the cake:
  • 25g unsalted soften butter
  • 90g soft brown sugar
  • 100g self raising flour
  • 1 tbsp golden syrup
  • 1 tbsp treacle
  • 1 egg
  • ½ tsp vanilla extract
  • ½ tsp bicarbonate soda
  • 100g pitted dates
  • 150ml boiling water
Instructions
  1. Start by making the sauce, place all the sauce ingredients in a sauce pan and bring to the boil. make the sauce for the sticky toffee pudding
  2. Preheat the oven to 180 degrees C, grease and flour the pudding moulds.
  3. Put 2-3 tbsp of the sauce in the bottom of each pudding mould and place the moulds in the freezer while you make the sponge.Flour, grease the moulds and add a bit of the toffee sauce
  4. To prepare the dates, soak the dates in the boiling water for 5 minutes before adding the bicarbonate and blending in a food process to a smooth puree. sticky toffee pudding recipe
  5. To make the sponge, cream the butter and sugar, then add the egg, golden syrup, treacle and vanilla. sticky toffee pudding recipe sticky toffee pudding recipe
  6. Mix in the flour gradually, then add the date mixture and mix well. sticky toffee pudding recipe
  7. Remove the moulds from the freezer, divide the mixture between the moulds and bake for 25-30 mins or until golden brown. sticky toffee pudding recipe
  8. Serve with more sauce and vanilla ice cream.
