Mackerel Pate

This recipe makes a quick and easy starter that you will find quite easy to consume lots of!! Its quick and easy because you throw everything into a blender, then you serve. Simples! The Tahini gives the pate a creamy texture but also keeps the pate quite solid and spreadable. You can make this with creme fraiche or cottage cheese but the Tahini works well.

 

 

The Pate is yummy by itself, but topped with an avocado salsa and it becomes something else. The salsa has sharper taste with hints of chilli, lime and mango (read on) so it goes well with the nutty & creamy flavour of the Pate.

  • 4 Tbsp tahine paste
  • 2 tbsp water
  • Juice of one lime
  • 1/2 large red chilli or 1/4 tsp dried chilli flakes
  • 2-3 tbsp fresh coriander
  • Salt and pepper to season

For the Salsa

  • 1 large tomato, peeled, deseeded and chopped
  • 1 avocado, peeled and chopped
  • 1/2 red onion, chopped into large chunks
  • 1 tbsp fresh chopped coriander
  • Salt & pepper to taste

Dressing

  • 1 tsp olive oil
  • 1 tsp mango chutney
  • 1/2 lime juice
  • 1/4 tsp Tabasco

Method

 

  • First, make the salsa and put in the fridge for an hour
  • To do this peel and chop the tomato and avocado into equal chunks
  • Chop the onion and add to this
  • Add the rest of the ingredients and mix everything wel
  • Break up the mackerel fillet into small strips and place in a food processor
  • Add the rest of the pate ingredients and blend
  • Add more of any ingredient until you get the right consistency and flavour
  • Serve with garlic rubbed toasted bread and enjoy
