In your stand mixer or bowl, combine the instant yeast, salt, honey and warm water then mix well
Leave the mixture to stand for 10 minutes until the yeast starts to froth
Add 2 cups of flour, oil and salt and mix with a wooden spoon. At this stage the mixture is quite runny and sticky. Switch on the stand mixer with a dough hook and allow it to mix the dough..you will see the gluten begin to stretch in the dough. Do this for 5 minutes until well combined and smooth.
Slowly add the rest of the flour, ½ a cup at a time and continue to mix for 2-3 minutes until you have a pizza dough looking ball.
If the mixture is too runny and sticky, add more bread flour (sometimes it takes an extra ½ to 1 cup of extra flour to get it right)
Sometimes you will need to take out the dough and give it a final hand-kneading for a couple of minutes to make it into a dough ball
When ready divide into 2 dough balls, cover with tea towels, top with flour so as not to stick.
Leave in a warm place to rise and double in size (should take an hour depending on the warmth)
Roll the dough
When the dough has risen enough you are ready to roll and assemble
At this stage we usually pre-heat the oven to very high while we roll out the dough (if using a baking stone, put it in the oven now)
On a clean surface mix the ½ cup each of plain and corn flour
Cut the dough into 2 balls and place on top of the flours.
Begin rolling out into an even circle until the dough is around 7 inches wide
Using 2 hands, press down with the outer edges of your hand to create a slight crust.
Press down and gently pull outwards with both hands so as to create the crust and also stretch the middle
Do this gently until you have stretched the pizza dough to the desirable size
At this stage you may still find your pizza has bubbles due to the yeast. use a fork to "prod" the base all over so that it doesn't continue to rise and bubble.
Assemble
To finish, place your pizza dough on your oven tray or baking stone
Spread the bolognese sauce on top
Top with grated mozzarella cheese
Drizzle over bbq sauce
Bake in the oven for 10-12 minutes depending on heat
Remove when the cheese has melted and the base is brown and cooked
Brush the crust with a little olive oil,. leave to stand for 5 minutes before enjoying
