Chicken Shawarma

A take-away style wrap sandwich filled with chicken, peppers and a variety of dips and salad.

Ingredients
Chicken Marinade
  • 1 tbsp spoons Greek yoghurt
  • 1 tbsp smooth peanut butter
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp cinnamon powder
  • ½ tsp all spice
  • ½ tsp black pepper
  • ½ ground cardamom powder
  • ½ tsp ground cloves
  • 2 tbsp olive oil
For the Shawarma Mix
  • 4 boneless chicken thights (or any bits of chicken..thighs are juicy and do not dry out)
  • ½ Red Pepper, sliced
  • ½ Yellow Pepper, sliced
  • 1 medium onion, sliced
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp chilli flakes (optional)
  • 1 tomato, chopped
  • Fresh Coriander, chopped
  • Lime juice
  • Wraps or round pitta bread
Shawarma Toppings
  • Salad Leaves
  • Tahini Paste
  • Pickles
  • JalapeƱo peppers
  • Chilli Sauce
  • Mayo
Instructions
Marinade the chicken
  1. For best results marinade the chicken overnight
  2. Mix all the marinade ingredients togethermarinade the shawarma chicken
  3. Add the chicken, cover and leave to marinade marinade the chicken shawarma
Cook the chicken
  1. Take the chicken pieces out of the marinade and remove the excess marinade
  2. Sprinkle with additional salt on the outside
  3. Add a little oil to the pan
  4. Grill in a griddle pan (or under the grill) on a high heat for around 5-7 minutes until nicely charred and cooked cook the chicken shawarma recipe
  5. Set aside to cool
Prepare the Tahini Dip
  1. Add a tbsp of the tahini paste to a small bowl
  2. Add ½ juice of a lime or lemon
  3. Add a small amount of cold water and begin mixing the paste with the back of a spoon
  4. When the mixture thickens add a little more water
  5. Continue to mix until you have a smooth, creamy consistency

Cook the Shawerma
  1. When ready add some olive oil in a frying pan
  2. Add the shawarma pieces and the onions
  3. Fry on a high heat and season with the cumin, paprika and chilli flakes Prepare the tahini dip recipe
  4. Fry for 2 minutes then add the peppers
  5. Fry for 2 minutes then add the tomato
  6. Continue to fry until the peppers and onions are cooked and everything is coming together
  7. Taste for seasoning and add additional salt and pepper as required
  8. Add a squeeze of lime and fresh coriander to finish Prepare the tahini dip recipe
To serve
  1. Heat your wraps according to their instructions
  2. Add some salad leaves and top with shawarma mix
  3. Drizzle with tahini, then wrap and enjoy
Notes
Also works with beef. Try adding more chicken than pepper/onions to make a more satisfying sandwich Can also add mayonaise, chilli sauce and fresh onion/salad like a kebab house
