Caramelised onion and tomato tart

A delicious, fresh tart that is simple in its contents but complex in its flavour

Serves: 2-4
For the Caramelised Onions
  • 1 tbsp olive oil
  • 3 medium onions, sliced
  • 1tsp brown sugar
  • ¼ tsp black pepper
  • 1 tbsp balsamic vinegar
For the Tart
  • Cherry tomatoes (halved)
  • Rock salt
  • ½ tsp dried mixed herbs
  • Handful of fresh basil leaves
  • Puff pastry
  • 1 tbsp olive oil
Caramelise the onions
  1. Fry the onions in a little olive oil over a medium heat.
  2. Keep stirring the onions so they caramelise evenly, 10 minutes
  3. Add the sugar, pepper and balsamic vinegar and continue to caramelise for another 5-10 minutes
  4. Set aside to cool Caramelised the onions
For the Tart
  1. Preheat the oven to 180 degrees centigrade
  2. To prepare the tart simply roll out the puff pastry
  3. Score around the outside of the tart (2cm from the edge)
  4. Spread the caramelised onions in the middle spread the caramelised onions on the puff pastry
  5. Add the tomatoes and sprinkle with sea salt and mixed herbs add the tomatoes and bake
  6. Add a drizzle of olive oil over the top
  7. Bake for 15-20 minutes until the pastry is golden brown
  8. To serve sprinkle with chopped basil and a drizzle of olive oil
