Caramelised onion and tomato tart
Recipe type: Side, Appetiser
Serves: 2-4
- 1 tbsp olive oil
- 3 medium onions, sliced
- 1tsp brown sugar
- ¼ tsp black pepper
- 1 tbsp balsamic vinegar
- Cherry tomatoes (halved)
- Rock salt
- ½ tsp dried mixed herbs
- Handful of fresh basil leaves
- Puff pastry
- 1 tbsp olive oil
- Fry the onions in a little olive oil over a medium heat.
- Keep stirring the onions so they caramelise evenly, 10 minutes
- Add the sugar, pepper and balsamic vinegar and continue to caramelise for another 5-10 minutes
- Set aside to cool

- Preheat the oven to 180 degrees centigrade
- To prepare the tart simply roll out the puff pastry
- Score around the outside of the tart (2cm from the edge)
- Spread the caramelised onions in the middle

- Add the tomatoes and sprinkle with sea salt and mixed herbs

- Add a drizzle of olive oil over the top
- Bake for 15-20 minutes until the pastry is golden brown
- To serve sprinkle with chopped basil and a drizzle of olive oil
